Ingredients
- 60 g Vitalite Plant-Based Parmesan Flavoured Extra-Fine Shreds
- 200 g Vitalite Plant-Based Mozzarella Flavoured Shreds
- 500 ml (2 cups) Cavatappi pasta
- 1 red pepper
- 1 orange pepper
- 1 yellow pepper
- 1 red onion
- 250 ml (1 cup) cherry tomatoes
- 4 tbsp olive oil
- 1 tbsp oregano
- 1 tbsp crushed pepper
- 1 tbsp garlic powder
- Salt and pepper
Directions
- Preheat the oven to 200 ºC (400 ºF). In a pot, bring the water to boil and let the pasta cook for 8 minutes. Reserve.
- On a sheet-pan, place the parchment paper. Cut the peppers, onion and tomatoes and place them on the pan. Drizzle with olive oil and season with spices directly.
- Put the sheet-pan in the oven for 20 minutes or until the veggies are golden.
- In a bowl, add the cooked pasta, olive oil and Vitalite Plant-Based Parmesan Flavoured Extra-Fine Shreds. Mix, then add the seasoned pasta to the vegetables on the sheet-pan.
- Add the Vitalite Plant-Based Mozzarella Flavoured Shreds on top and sprinkle with salt and pepper.
- Put the sheet in the oven to broil until the top is golden and melty.
